Skill Set Snapshot

A set of skills to equip individuals in hygienic practices and handling food safely during the storage, preparation, display, service, and disposal of food. The skill set sets provides the first steps towards being a food safety supervisor working in tourism, hospitality and catering organisations with permanent or temporary kitchen premises, and smaller food preparation or bar areas.

What you will learn:

  • Personal hygiene and hand washing

  • Using Personal Protective Equipment (PPE)

  • Identifying high-risk foods and high-risk customers

  • Safe food storage and waste disposal

  • Single-use item protocols

  • How to implement food safety programs

Program Details

Entry Requirements

There are no entry requirements for this qualification.

*While there are no pre-requisite for this course, participants must take the language, literacy, and numeracy (LLN) assessment. This will help us identify areas where you might need additional support during your studies.

Delivery

The training program is delivered with comprehensive trainer support in a face-to-face setting with one day in the classroom and one day in a commercial kitchen environment for practical skills demonstration.

What you need before starting the course

To undertake this course, you will need:

  • A computer with internet access and a web browser.
  • A regular access to a reliable internet connection and an email address.
  • Adobe Acrobat Reader and/or Adobe Flash Player.
  • A mobile device (e.g. Mobile phone) capable of recording short videos at your workplace with a supervisor.
  • To begin this course, you will need a USI. For more information on USI, go to: www.usi.gov.au It is a government requirement that participants undertaking Nationally Recognised Training in Australia have a unique student identifier (USI). 

Course Cost

  • Government funding may be available for eligible participants in Tasmania.  
  • If you are not eligible for government funding, the course can be delivered as a Fee for Service program across all States. We can organise a payment plan with you to cover the cost of the course.
